Meet Chef Marcus
Chef Marcus R. Efford-Singleton's passion for food was ignited as a child growing up in the biggest metropolis in New Jersey--Newark. His culinary arts path started when, as a young boy, he spent a lot of time in the kitchen with his great grandmother Reynolds and grandmother Satterfield. Reynolds was a unique cook. She crafted amazing meals with minimal ingredients; Chef Marcus was a willing sous-chef. His grandmother was more interested in baking and making lovely, delicious cakes. She had baking secrets that Chef Marcus wanted to discover.
Chef Marcus graduated from Academy of Vocational Careers (AVC) High School in Newark, New Jersey. This is where he made the decision that would change his life forever. While attending AVC, his love for cooking and culinary arts grew stronger so he decided to continue his education in this field at Robert Morris University in Chicago, Illinois where he received an Associates Degree in Culinary Arts. He also received his Bachelors Degree in Food and Nutrition Entrepreneurship from Arizona State University in Phoenix, Arizona. Chef Marcus had great support from his parents, godparents Floyd, grandparents, and church family.
Chef Marcus went vegan in August 2012. He was having some health issues; through research, readings, and conversation, he discovered that the vegan diet might be helpful. And it was! However, he was then faced with the challenge of teaching himself how to live the "vegan lifestyle." He started purchasing vegan cookbooks; his godmother, Jacqueline, and his church mother, Esther, provided him with health resources as well. All this information just left him hungry for more!
Chef Marcus had a rich, cultured culinary history. He always had a great appreciation for a multitude of dishes--Haitian, French, Italian, Caribbean, and Irish--all of which were heavily meat driven. Many of these cookbooks were good but were strongly lacking in savor and could not compare to tasty gourmet vegan bites! That's when Chef Marcus decided to transform—with creativity, dedication, and love--all of his favorite dishes into vegan friendly meals.
In January 2017, Chef Marcus started his own Vegan Cooking Channel on YouTube. This is one way to show the world his great talent and his passion for cooking. "Bon Vegan Appetit" Cooking Channel on YouTube shows how to creatively make wonderfully delicious vegan dishes. This channel is for people who want to become Vegan, Vegetarian, Pescatarian, or for someone who is simply interested in healthy eating. Chef Marcus cooks with fresh organic ingredients, ensuring proper nutrition, vitamins, and minerals.
Chef Marcus Efford-Singleton’s goal is to take vegan cuisine to the next level. One day Chef Marcus will open up his own cafe. This cafe will have all of Chef Marcus’ delicious vegan organic dishes. People from all over the world will come and try his food. "Bon Vegan Appetit" is beginning now!
History about The Global Vegan Cafe
On July 22, 2019, The Global Vegan Cafe was born in Rahway, New Jersey, as a vegan meal-prep plan delivery service. The restaurant’s name came from Chef Marcus’ 1st cookbook called “The Global Vegan Cookbook.” The word “GLOBAL” resonated with him because when companies have the word “Global” as a part of their business, there’s nothing Global about it. He wanted to make sure the company was genuinely global. The cafe offers cuisines from more than 15 different cultures on the menu. He uses eco-friendly products and uses plant-based products. We are located in Rahway, NJ, Newark, NJ, and Poughkeepsie, NY.
